Maple-Glazed Salmon

2-teaspoon paprika
1-teaspoon ancho chili powder (may substitute regular chili powder)
1-teaspoon chili powder
½ teaspoon ground cumin
½ teaspoon brown sugar
1-teaspoon kosher salt
4 (6-ounce) salmon fillets
Cooking spray
1-teaspoon maple syrup


Preheat grill with cover closed to medium temperature (temperatures will vary according to your grill). Clean grates then spray entire grill with cooking spray.

Combine first 5 ingredients. Sprinkle fish with salt, rub with paprika mixture.
Place fish on grill rack coated with cooking spray; grill 7 minutes. Drizzle fish with syrup, return to grill for 1 minute or until fish flakes easily when tested with fork.

Prep Time: 15 minutes
Cook Time: 8-12 minutes, depending on desired tempature

Yield: 4 servings
