Almond Orange Biscotti

2-tablespoon butter
1-cup sugar
1-tablespoon amaretto
2-cups flour
1/3-teaspoon salt
1 egg
3-egg whites
1-teaspoon vanilla
½ teaspoon almond extract
½ teaspoon orange extract
1 teaspoon orange zest
½ cup chopped almonds
½ cup dried apricots, diced

 
   
 

Preheat the oven to 325 degrees. Spray a cookie sheet with nonfat butter flavored cooking spray.

In a large bowl, using an electric mixer, mix the butter, sugar and amaretto until slightly creamy. Add the remaining ingredients and mix until the dough forms.
Divide the dough and shape into two logs about ¾ inch thick, 2 inches wide and 12 inches long. Place on cookie sheet and bake for about 25 minutes. Remove and let cool for about 5 minutes.
Slice the logs ¾ inch wide and place on cookie sheet. Cook for about 5 minutes.
Remove and let cool on a wire rack for 20 to 30 minutes.

Store in airtight container

Prep Time: 25 minutes
Cook Time: 1st cook - 25 minutes & 2nd cook - 5 minutes
Yield: 48 cookies
